Syrah La Tour
D.O.P.
Les Crêtes has produced Syrah since 1995, as a table wine as it was not yet recognised as an appellation. In 2007 the legislation changed and allowed Les Crêtes to present it with its honorouble varietal name. It is renowned for its mineral, crisp expression that aknowledges its mountain environment.

Production process
Vinification
Chilling of the grapes, destemming, followed by fermentation for 12 days, in stainless steel, at a controlled temperature of 24°C, with daily pump up operations.
Ageing
In oak barrique, 300L, for 12 months.

Tasting notes
Ruby with shades of grenate . On the nose there are notes of spices and toast, pronounced red fruits of the forest. Fine and complex palate, sapid and fresh. Long and fruity finish, soft tannins.
Suggested food pairing
Duck breast, snails with parmesan sauce, wild boar ragu on tagliatelle.
