This fine and smooth Le Merle is the inspiration of Elena and Eleonora to experiment and innovate in an alpine context that is not generally suited to a deep and rich variety, requiring particular ripening conditions. With the right care and strategy this has been possible, in a site populated by blackbirds, hence the name on the label.

Surface area: 0,50 ha, Guyot training system; 7.500 plants/ha, on embankments. Yield 6.500 kg/ha.

Vinification
Chilling and destemming, followed by whole cluster fermentation for 12 days at a controlled temperature of 25 °C, regular pump up practices

Maturation in oak barriques, 300L (50% new and 50% second refill)

Tasting notes
Deep ruby. Fruits of the forest and blackberry jam on the nose that accompany violet and rose scents. Spicy on the palate that combines well with toasted cocoa beans, giving the wine a mellow finish.
Suggested food pairing
Classic donkey stew, fiorentina steak, ossobuco and lamb dishes.
