D.O.P.

The Nebbiolo, typical of Piemonte, has always been part of the Valle d'Aosta viticultural scene. Its name here is Picotendro and is planted maily in the alluvial area of Arnad and Issogne. We pride ourselves in the care and preservation of its alpine identity, named Sommet because of the sorrounding chain of mountains.

Climatic trend

Alpine climate with short, cool and windy summers. Long, cold winters with pronounced seasonal ranges with low levels of rainfall.

Surface area 1,5 ha, sistema a Guyot training system; 7500 plants/ha, on embankments and slopeways. Yield 5500 kg/ha.

Inclined, morenic soil with granitic base (sand +50%, medium lymestone and abundant residue).

Production process


Vinification

Destemming of the grapes, whole-cluster fermentation for 10 days at a controlled temperature (23°C), with daily punch-downs.

Ageing

in French oak, of 25Hl for 12 months

Tasting notes


Light ruby . On the nose blackberry and black cherry, violet and balsamic notes. Direct on the nose but also elegant, fresh, round and spicy. Long finish.

Bollito misto, calf’s liver, ravioli with roast sauce.
