Pinot Nero Revei®

Pinot Noir Revei, that, in the local Patois dialect, means clock and is linked to the story of the Medieval Turret that dominates our vineyard in Aymavilles. This wine originates from here and the Turret was home to a hermit clockmaker, custodian of time, that nowdays reminds us of its importance and of our mortality. Great wisdom and patience are necessary to create this Revei wine, the right time for the ripening of the Pinot Noir and the patience for its ageing. Here time expands to consent full ripening of the grape, fully expressing its alpine potential. Care and mastery are required, for its ageing in our winery.

Surface area 0,60 ha, sistema a Guyot training system; 7500 plants/ha, on embankments and slopeways. Yield 4000 kg/ha.

Inclined, morenic soil with granitic base (sand +50%, medium lymestone and abundant residue).
Production process
Vinification
Selection and destemming of the chilled grapes, cryomaceration of whole berries for 2 days, 12 days of fermentation in stainless steel at a controlled temperature (23 C°). Alcoholic fermentation completed after being drained off the skins.

Maturation in oak tonneaux of 700L, second refill

Tasting notes
Bright ruby . Ripe, red fruits on the nose with hints of chocolate. Flavourful on the palate with a fine structure and velvety tannins. Balanced and well rounded, it also has a long finish.
Suggested food pairing
Braised veal cheek, toma of Gressoney, veal cutlet, saffron rice with ossobuco.
