Chardonnay Cuvée Bois®

D.O.P

Broad, structured chardonnay recognized for elegance and style. Noble tannins derived from fine woods, sur lies aging and repeated bâtonnages give it extraordinary complexity and remarkable balance.

The name Cuvèe Bois comes from its method of aging in French oak ‘cuves’ ‘bois’ barrels.

Features

  • Production area 7 crus located in different municipalities in the central valley
  • Serving Temperature 13° - 15°C
  • Type of glass Renano wide
  • Climate trend Alpine climate with short, cool, breezy summers. Long cold winters with large temperature ranges. Low rainfall levels (500-1000 mm. annually).
  • Harvest and annual production Manual, second half of September. 18,000 bott.
  • First vintage 1995
  • Available formats 750 ml, 1500 ml

Vineyard

  • Vineyard Area about 4 ha, Guyot system; planting density 7,500 feet per hectare, cordon and retouch rows. Yield 8,000 kg/ha.
  • Altitude Altitude 550/750 meters above sea level.
  • Type of land Granitic matrix moraine soils, loose (sand +50%, medium silt and limestone, abundant skeleton), sloping. Terraces with south and southeast and northeast exposure.

Production process

  • Vinification Grape selection, chilling and whole cluster soft pressing of 7 crus, fermentation in 300 L French oak barrels and aging "sur lies" for 12 months, with weekly bâtonnages.
  • Aging Barriques used 50% new and 50% second-passage.
  • Bottle aging 12 months
  • Total acidity 6 g/L
  • pH 3.2
  • Net dry extract Alcohol 14.5% vol.

Tasting Notes

  • Straw yellow with golden hues. Intense and complex nose, with aromas of white fruit, hazelnut, vanilla, banana and candied citron and mineral and spicy nuances. The palate is dense and rich, with an elegant and harmonious finish.

Recommended pairings

  • Foie gras, truffle noodles, filet in hazelnut crust, fondue from Valle d’Aosta.
