Vineyard
- Vineyard Land area 6 ha, Guyot system; planting 7,500 feet per hectare, cordon and retouching rows. Yield 9,000 kg/ha.
- Altitude Altitude 600/800 meters above sea level.
- Type of land Granitic matrix moraine soils, loose (sand +50%, medium silt and limestone, abundant skeleton), sloping. Terraces with south and southeast and northeast exposure.
Production process
- Vinification Chilling and whole cluster soft pressing of grapes, 12-day fermentation in stainless steel at controlled temperature (14°c).
- Aging
- Bottle aging Aged "sur lies" for 3 months.
- Total acidity 6 g/L
- pH 3.3
- Net dry extract Alcohol 13.5% vol.
Tasting Notes
- Brilliant, straw yellow. Delicate, floral nose with hints of banana and plum. Soft, savory and mineral on the palate.
Recommended pairings
- Cold cuts and cheeses, elaborate first courses, rabbit Ligurian style, gnocchi alla bava. Also suitable as an aperitif.
