Fumin La Cor®

D.O.P

This reserve was born from the long aging of our native Fumin. It is dedicated to the historic family mill on Via Moulins, which with its cellars has also housed La Cor since the 1700s. La Cor in local architecture, was the inner courtyard of a building, reserved for food production and exchange. This space held a role of great importance in the local economy of the time, which did not involve much monetary mercantile exchange, allowing the trade of different kinds through barter.

In addition to the cellars, the Mill includes two large stone millstones for pressing walnut oil, those for flours, and tools for cider and wine production, to this day in excellent condition.

Vineyard

  • Vineyard Guyot training system; 7,500-foot-per-hectare planting, cordon and retouching rows.
  • Altitude Altitude 650 meters above sea level.
  • Type of land Moraine soils with granitic matrix, loose (sand +50%, medium silt and limestone, abundant skeleton), sloping. Terraces with north/west and south exposures.

Production process

  • Vinification De-stemming of grapes, 8/10 days fermentation in stainless steel at controlled temperature (22°c), with daily pumping over.
  • Aging 300L French oak barrels 50% new and 50% second-passage for 12 months.
  • Bottle aging 36 months
  • Total acidity 6 g/L
  • pH 3.3
  • Net dry extract Alcohol 13.5% vol.

Tasting Notes

  • Impenetrable Red. Nose of Wide Nuances, ripe fruit and dried flowers greeted by spicy memories with background of toast and leather. Consistent palate, rigorous tannic texture contextualized with deep softness. Long, engaging finish with expert tension.

Recommended pairings

  • Game, mature meats, Ivre de Fumin.
