Our Chardonnay was born in 1995, immediately showing strength and elegance. The noble tannins are imparted by the prestigious oak and lees ageing and the practice of th Battonages confer great complexity but also balance to the wine. Its name Cuvèe Bois identifies the blend of the selection of the fractions of wine that have aged in this delicate oak barrels.

Production process
Vinification
Selection of grapes, refrigeration, and gentle whole-cluster pressing of 7 crus, fermentation in 300 L French oak barrels, and aging 'sur lies' for 12 months with weekly bâtonnage.
Ageing
Fermentation in 300 L French oak barrels and aging 'sur lies' for 12 months, with weekly bâtonnage. Barrels are 50% new and 50% second refill barrel.

Tasting notes
Gold lemon. Pronounced and complex on the nose, stewed apple, plantain with charred notes, influence of the lees and candied peel as well as hazelnut and vanilla. Full body, rich on the palate, elegant and balanced with a long finish.
