Chambave Moscato

Chambave is a small village in Valle d'Aosta, between Chantillon and Aosta. Its good positioning benefits from a particular microclimate that is renowned for the production of wines of prestige that show pronounced aromas. Its appreciation dates back to the XV century as a statement of 1450 narrates of a gift of barrels of dry or passito muscat of Chambave, being given to Bona di Borbone, mother of Amedeo VIII of Savoy, on behalf of noble residents of the Valle d'Aosta.

Production process
Vinification
Destemming of the grapes and cold soak, in press, for the entire night. Fermentation for 10 days at a controlled temperature of 12°.
Ageing
Lees ageing in stainless steel, for 5 months.

Tasting notes
Pale lemon. Floral bouquet, fine and delicate white peach, sage and a hint of herbs. Palate : dry, fresh with good structure. Varietal expression, soft and in harmony with the juicy fruit burst.
Suggested food pairing
Ideal aperitif but good accompaniment to seafood risotto, mocetta of trout, crostacians, blue cheeses and white meat.
