Production process


Vinification

Refrigeration and gentle, pneumatic pressing of the whole cluster. Fermentation of 12 days in stainless steel, at a controlled temperature (14°c)

Tasting notes


Bright lemon. Delicate and floral on the nose, banana and clementine. Palate : soft, rounded, sapid and mineral.

Cheese and cured meats, richer first courses, ligurian style stewed rabbit, gnocchi alla bava and excellent for aperitif
