Quality sparkling wine

Neblù is an indigenous black grape variety from Valle d’Aosta, traditionally vinified into red wine according to the Valle d’Aosta specification.

Since 2005 Les Crêtes has started its vinification into sparkling wine, resulting in a unique classic method.

Vineyard

Vineyard Area about 1.5 ha, Guyot system; planting 7,500 ft. per hectare, retracted rows. Yield 10,000 kg/ha.
Altitude Altitude 650 meters above sea level.
Type of land Granitic matrix moraine soils, loose (sand +50%, medium silt and limestone, abundant skeleton), sloping. Terraces with southern, northern, eastern and western exposure.

Production process

Vinification Cryomaceration of whole cluster grapes in press for 5 hours followed by soft pressing, 12-day fermentation at controlled temperature (14°C)
Aging Sparkling wine made with the Classic Method and aged "sur lies" for 30 months.

Total acidity 8.5 g/L
pH 2.9
Net dry extract Alcohol 12.5% vol.

Tasting Notes

Brilliant, antique pink. Fine and persistent perlage, fruity nose with hints of cherry, currant and small red fruits; bread crust on the finish. Dry, fresh and savory in the mouth, with lingering finish.

Recommended pairings

Fish and shellfish crudités, lobster guazzetto, blue fish in tempura; venison tartare, cured meats, short-aged cheeses.
