The grapes in the composition of our rosé, come from different clones of the native Petit Rouge variety and from old vines, which contribute to its remarkable organoleptic complexity.

With rosé winemaking, we wanted to give this variety a new look, breaking out of the traditional patterns, which see it vinified in red with Torrette, the largest and oldest appellation in the Aosta Valley.

Vineyard

  • Vineyard Area about 1 ha, Guyot system; planting of 7,500 feet per hectare, cordon and retouching rows. Yield 8,000 kg/ha.
  • Altitude Altitude 700 meters above sea level.
  • Type of land Morainic, loose, sandy slope with northwest exposures. Altitude 700 meters above sea level.

Production process

  • Vinification 3 hours pellicular maceration of whole cluster grapes chilled in press. Fermentation of 12 days in stainless steel at controlled temperature (14 °C).
  • Aging Aged "sur lies" for 2 months.
  • Bottle aging
  • Total acidity 6.5 g/L
  • pH 3.2
  • Net dry extract Alcohol 12.5% vol.

Tasting Notes

  • Brilliant, soft antique pink. Delicate, pleasant, floral and fruity nose with clear notes of strawberry and currant and white melon. Fresh and pleasant palate with notes of white peach, fine structure, good acidity and savory finish.

Recommended pairings

  • Fried seafood, crudités, bluefish, wood-fired pizza, also suitable as an aperitif.
