La Sabla® – Vino Rosso

D.O.P.

Fruity and enveloping, the Sabla wine has been produced by the Charrère family since 1971. It is a historical wine of the winery and today, as it was then, it is still presented as a blend of red grape varieties, grown in the oldest vineyards. La Sabla comes from sand, in the local dialect, that refers to the sandy composition of the vineyards soil.

Surface area: 4.0 ha, Guyot training system; 8000 plants/ha, on embankments and slopeways. Yield 8000 kg/ha.

Inclined, morenic soil with granitic base (sand +50%, medium lymestone and abundant residue).

Production process


Vinification

Dchilling, destemming and crushing, followed by fermentation for 10 days at a controlled temperature of 25 °C, daily pump up practices

In stainless steel for 8 months

Tasting notes


Deep ruby. Delicate rasberry and scent of violet. Fresh and fruity on the palate, smooth tannins. Intense and long finish, balanced acidity.

Cured donkey meat, girlled steak, tripe in its sauce or suckling pig.
