Doré clusters are harvested, late in the year, to precede the first snowfall of the year. from the intense golden color (Doré in French) comes its name.

A natural dessert of great freshness and pleasantness.

  • Climate trend Alpine climate with short, cool, breezy summers. Long cold winters with large temperature ranges. Low rainfall levels (500-1000 mm. annually).

Vineyard

  • Vineyard Area about 0.5 ha, Guyot and Gobelet system; planting of 8,000/10,000 feet per hectare. Cordon and retreat and free-form rows. Yield 2,500 kg/ha.
  • Altitude Altitude 600/950 meters above sea level.
  • Type of land Granitic matrix moraine soils, loose (sand +50%, medium silt and limestone, abundant skeleton), sloping with northwest and south exposures.

Production process

  • Vinification Drying of the grapes on the vine, whole cluster soft pressing, fermentation for 25 days at controlled temperature (13 °C) and aging "sur lies" for 6 months. Bottling and bottle aging of 6 months.
  • Aging Maturation "sur lies" of 6 months. Bottling and bottle aging of 6 months.
  • Bottle aging 6 months
  • Total acidity 6.5 g/L
  • pH 3.3
  • Net dry extract Alcohol 14 % vol.

Tasting Notes

  • Golden yellow. On the nose hints of eggnog, custard, honey, aromatic berries, caramel and dried apricots. On the palate, soft, fresh and savory with long fruity finish.

Recommended pairings

  • Strudel, dried fruit, extra dark chocolate, Valdostan foie gras tiles, bleu d’aoste, smoked trout. Also suitable as a meditation wine to accompany moments of leisure and pleasure.
